Corned Beef and Vegetables
Recipe type: Beef
  • 4 lbs. corned beef brisket
  • 2 cloves garlic
  • 1 bay leaf
  • 1 med. onion
  • 6-8 pieces allspice
  • 4 potatoes
  • 1 sm. head cabbage
  • 1 pkg. carrots
  1. Soak corned beef in cold water about ½ hour. Drain. Put beef in large pot with water to cover. Add garlic, bay leaf, onion and allspice. Simmer about 3 hours.
  2. Remove beef from pot and set aside. Save cooking water and use it to cook vegetables until tender. Warm beef, fat side up, at 350 degrees for about 20 minutes.
