Food Focus: Strawberries

Delicious red colored strawberries are among the most popular berries. These berries have the taste that varies from quite sweet to acidic. Strawberries are low in calories and fats but rich source of health promoting phyto-nutrients, minerals and vitamins that are essential for optimum health.
Fresh berries are an excellent source of vitamin-C. The fruit is rich in B-complex group of vitamins. It contains very good amounts of vitamin B-6, niacin, riboflavin, pantothenic acid and folic acid. Strawberries contain vitamin A, vitamin E and health promoting flavonoid poly phenolic antioxidants such as lutein, zea-xanthin and beta-carotene in small amounts.
Additionally, they contain a good amount of minerals like potassium, manganese, fluorine, copper, iron and iodine. That is a whole lot packed in a little package!

Recipe of the Month: YUMMY STRAWBERRY BRUSCHETTA

INGREDIENTS:
1 crusty baguette
Ricotta cheese
Strawberries
Olive oil
Pecans
Arugula
8 ounces cherry tomatoes, halved
Balsamic vinegar
Baby Spinach
Goat cheese
DIRECTIONS:
Make Strawberry Bruschetta by spreading a crusty baguette with ricotta cheese, then topping it with arugula, fresh strawberries, and a drizzle of balsamic vinegar and olive oil. Or, toss them with baby spinach, pecan halves and goat cheese for a fresh Strawberry Spinach Salad.
